Keto Jalapeño Poppers

Hey guys! With the Super Bowl around the corner I was inspired to cook up an old favorite. Jalapeño poppers! I know I’ll be taking this to a Super Bowl party with me!

This recipe is slightly tedious (because you have to gut the jalapeños) but I promise it’s worth it.

All you’ll need is jalapeños, cream cheese (I accidentally photographed the whipped one here), bacon, garlic and salt!

First, preheat the oven to 400 degrees. Next is the messy step, cut the jalapeños in half and scrape the seeds from the jalapeños. (The more seeds you get out the less spicy it will be.) Be sure to keep the halves next to each other because you’re going to put them back together! Warning: do not touch your face after this step! Even if you wash your hands and you think the jalapeño juices are gone you are wrong!

Next, I scoop a heaping portion of cream cheese into a bowl and mix in garlic and salt. (Today I hadn’t exactly preplanned this so I didn’t have any fresh garlic, instead I used garlic salt.)

Once the cream cheese and garlic mixture is made, stuff the jalapeño halves. Warning: make sure you put the cream cheese in a separate bowl even if you don’t plan on mixing it with garlic because you will make your cream cheese spicy! Nobody wants that surprise the next day!

Once the jalapeños are filled with cream cheese put the halves back together and wrap them in bacon!

Bake the jalapeño poppers for 15-20 minutes until the bacon is cooked to your liking. I was so hungry that I couldn’t wait any longer! Next time I’ll turn the broiler on for a few minutes to really get the bacon crispy!
